We’ve had folks asking, “When’s the cabbage coming in?” like it’s Christmas morning, and we don’t blame you. This leafy green may not look like much at first glance, but it’s a homestead kitchen staple—versatile, hearty, and just plain good for the soul (and your gut too).

As we walk through these warm July days and gear up for festival weekend, the garden is offering up its best. Our farm stand is overflowing with vibrant produce, and cabbage is finally front and center. And what’s a farm girl to do when the harvest rolls in? She fires up the cast iron, pulls out her apron, and gets to cookin’.

Before I share a few of my favorite cabbage recipes, I just want to say: it blesses me more than I can say to see y’all stop by, wave from your cars, ask about baskets, or simply share a kind word. We don’t just grow food—we grow community. And I pray every head of cabbage, every cherry tomato, every Bountiful Basket that leaves our hands carries a little love with it.

Now—let’s talk recipes. Below are three ways we love to turn humble cabbage into something worth gathering around the table for.

🥓 Country-Style Fried Cabbage with Bacon & Onions

Perfect for: A comforting side dish or hearty lunch
Pairs well with: Cornbread and farm-fresh eggs

Ingredients:

  • 1 small head green cabbage, chopped

  • 1 small yellow onion, sliced

  • 4 strips thick-cut bacon, chopped

  • Salt, pepper, and garlic powder to taste

  • Optional: dash of apple cider vinegar for brightness

Instructions:

  1. In a cast iron skillet, fry the bacon until crisp. Remove and set aside.

  2. Sauté onions in the bacon drippings until translucent.

  3. Add cabbage and cook down for 10–15 minutes, stirring occasionally.

  4. Season to taste and stir bacon back in. Serve hot with a drizzle of vinegar if desired.

🍲 Hearty Cabbage Roll Soup (Deconstructed & Easy)

Perfect for: Busy weeknights, slow cookers, and freezer meals

Ingredients:

  • 1 lb ground beef or sausage

  • 1/2 head cabbage, chopped

  • 1 cup cooked rice

  • 1 can (15 oz) diced tomatoes

  • 3 cups beef broth

  • 1 tsp garlic powder, onion powder, and Italian herbs

  • Salt & pepper to taste

Instructions:

  1. Brown meat in a large pot and drain.

  2. Add chopped cabbage, tomatoes, broth, and spices.

  3. Simmer for 25–30 minutes or until cabbage is tender.

  4. Stir in rice and simmer 5 more minutes before serving.

🥗 Garden-Fresh Coleslaw with Honey Mustard Dressing

Perfect for: BBQs, potlucks, or topping pulled pork

Ingredients:

  • 1/2 head green cabbage, shredded

  • 1 carrot, grated

  • 1/4 cup red onion, finely diced

  • 3 tbsp mayo

  • 1 tbsp Dijon mustard

  • 1 tbsp raw honey (local is best!)

  • 1 tbsp apple cider vinegar

  • Salt & pepper to taste

Instructions:

  1. Whisk mayo, mustard, honey, and vinegar.

  2. Toss cabbage, carrots, and onion in a large bowl.

  3. Pour dressing over the top, mix well, and chill for 30+ minutes.
