If you’ve ever searched how to start a sourdough starter and walked away feeling overwhelmed, you’re not alone.
There are endless methods.
Conflicting timelines.
Strong opinions about flour, water, temperature, jars, schedules…
But what most instructions don’t tell you is this:
Sourdough starter grows best when you slow down.
That simple truth changed how I bake, how I stock our pantry, and how I approach stewardship in our home. And it started with learning that bigger isn’t always better — especially in the kitchen.

Why Sourdough Starter Doesn’t Like to Be Rushed
Sourdough starter is alive.
It’s a living fermentation of flour and water that depends on balance, consistency, and time.
You can:

use high-quality flour
-
follow every feeding schedule
-
keep it warm and well-placed
…and still fail — if you rush it.
When I first started, I used large quart jars and plenty of flour, thinking more would equal faster results. Instead, the starter struggled. Ingredients were wasted. It felt heavy and hard to manage.
That’s when I learned a key sourdough lesson:
Small, steady starters develop stronger fermentation.
Once I downsized and slowed down, the bubbles appeared. The structure improved. The starter came alive.

From the Kitchen to the Pantry — and the Heart
This lesson didn’t stop with sourdough.
It carried over into how we approach our pantry, our food, and our health. After a health scare several years ago, loved ones gently helped us see how many unnecessary chemicals and by-products were hiding in everyday foods.
Not with fear — but with care.
Since then, I’ve been on a mission to slowly rebuild our pantry with fewer store-bought items and more from-scratch staples. Not perfectly. Not all at once. But intentionally.
Our bodies are temples given to us by God Himself.
He entrusted us to care for them — and for those under our care, including our grandblessings.
Every small step toward better food brings peace that we’re walking the right path.

🌾 Simple Sourdough Starter Recipe (Slow & Steady Method)
When we talk about sourdough, we don’t just talk about it — we teach it.
This is the calm, beginner-friendly starter method I use and recommend.
What You’ll Need

1 small glass jar (pint size works best)
-
Unbleached all-purpose flour
-
Filtered or non-chlorinated water
-
Coffee filter or clean cloth + rubber band
Day 1
-
Mix ¼ cup flour + ¼ cup water
-
Stir until thick pancake batter consistency
-
Cover loosely and set on the counter
Day 2–5
Once daily:
-
Discard half
-
Feed with ¼ cup flour + ¼ cup water
-
Stir, cover, and let rest
Bubbles may appear slowly — that’s normal.
Day 6–7
Your starter is ready when it:
-
smells pleasantly sour
-
shows steady bubbles
-
rises and falls within a few hours after feeding
🌾 Slow growth is healthy growth.
🍞 Simple Sourdough Bread Recipe (Once Starter Is Ready)

Ingredients

½ cup active sourdough starter
-
1½ cups warm water
-
4 cups unbleached all-purpose flour
-
1½ teaspoons salt
Instructions
-
Mix starter and water. Add flour and salt. Stir until shaggy.

Rest 30 minutes. Stretch and fold 4 times.
-
Cover and bulk ferment 8–12 hours.
-
Shape loaf and rest 1–2 hours.

Bake at 450°F in a Dutch oven:

30 minutes lid on
-
15–20 minutes lid off
-

Cool at least 1 hour before slicing.
